Winemaker Notes
The fruit comes from Mount Gambier and Heywood in South West Victoria. This is Xavier’s original flagship wine. Made to make people happy. As Xavier says, it's everything that a Pinot Noir should be! The grapes are 100% destemmed and fermented in stainless steel for 2-3 weeks. Pressed and aged in a mixture of stainless and old barrels then filtered and bottled in August. Simple.
Tasting Notes
All shades of red forest berries greet you on the nose. Plenty of raspberries, cranberries, cherries and rhubarb with a sweet top note of red liquorice. The palate draws you in with all the savoury elements of dried flowers and wet leaves, damp forest floor and a dusting of spice. Tannins are earthy, a little bit of a black tea type and, like the rest of the flavours, quite savoury.
