Deep Mahogany in colour. Very aromatic, the notes of vanilla, hazelnut and old oak stand out. On the palate it is dry, very well structured, with notes of nougat and sandalwood. Its strong personality makes it able to stand up to characterful dishes when it can show its full potential, like red tuna or oxtail; but also with mature cheeses. Serve slightly chilled (12-14ºC) in a white Wine glass, then keep it cooled.
The Palomino grapes are gently harvested by hand and carried in small boxes to avoid damages to the grapes. Then, they are softly pressed, followed by fermentation at a controlled temperatura of 25ºC. Once the Wine reaches 11%-12% vol. It iss fortified to 17% vol. Then it spends at least eight years ageing in the traditional criaderas and solera system. The special microclima in El Puerto de Santa María, where our winery is located, allows this oxidative aging process to occur smoothly, imprinting its marvellous personality to the Wine.
