Mahogany-coloured wiht a piercing nose. Its oloroso carácter stands out over and intense notes of raisins, peach, toasted notes and vanilla background. On the palate this sherry is off dry and velvety in texture, with body and sweet notes from the pedro ximénez. It can be enjoyed as an aperitif or alongside patés, quiches, as well as very spicy indian or thai dishes. Serve slightly chilled (12-14ºC) in a white Wine glass, then keep it cooled.
The Palomino grapes are gently harvested by hand and carried in small boxes to avoid damages to the grapes. Then, they are softly pressed, followed by fermentation at a controlled temperatura of 28ºC. Once the Wine reaches 11%-12% vol. It iss fortified to 17% vol. Then it spends at least five years ageing in the traditional criaderas and solera system. The special microclimate in El Puerto de Santa María, where our winery is located, allows this oxidative aging process to occur smoothly, imprinting its marvellous personality to the Wine
